Shakshuka

Serves one to two. Aka Menemen, Uova in Purgatorio Ingredients 1/4 onion, finely chopped 1 chilli, thinly sliced 1 clove garlic, thinly sliced 1.5 tomatoes, chopped 2 eggs garnish: spring onions, cilantro parsley Fry onion and chilli until golden; add garlic for 2 minutes more. Then the tomato, 2 minutes. Cover until the tomatoes are done to a sauce consistency. Season with salt, pepper, oregano. Crack two eggs into the pan, then cover until done.

Oeufs en Cocotte

Ingredients 1 egg 15ml/1 tablespoon of crème fraîche (alternatively sour cream, Boursin or any other fresh soft cheese) fine sea salt freshly ground pepper paprika or the ground spice of your choice Your choice of: a small slice of ham, cut into strips (alternatively cooked bacon, tuna, tofu…) a handful of diced vegetables (could be tomatoes, mushrooms, peppers, zucchini, onions…) a handful of grated cheese a sprinkle of fresh or dried herbs (parsley, chives, cilantro…) Directions If you’ve chosen to include diced vegetables that need to be cooked (this is unnecessary for tomatoes for example), heat up a little oil in a small skillet, and sauté the vegetables until tender.

This is Madhur Jaffrey’s Eggs Massala recipe, and is apparently her favourite comfort food. Quiche Lorraine

Adapted from Elizabeth David. 285ml/1/2 pt double cream 3 eggs 200g smoked bacon/lardons 50/75g cheese - I use mixed parmesan and medium/mature cheddar; a mix of parmesan/gruyere also works well. 1/2 pack shortcrust pastry Roll out the pastry and line a 20/23cm or 8"/9" pie/flan dish. Bake blind for 15-20 mins. This makes a deep (approx 2.5cm/1") tart on a 18/20cm or 7"/8" tin, or about 1/2" on a 9"; both are pleasant, in their own way.
